Sometimes, the best meals are the ones that come together quickly without sacrificing flavor. This creamy gochujang pasta fits that bill perfectly, with its comforting sauce, a hint of unexpected spice, and a fun Italian-Korean fusion twist.
The secret ingredient here is gochujang paste, a Korean fermented condiment. It delivers a savory, slightly sweet, and satisfyingly spicy punch that adds depth to the dish. If you love a little heat, this recipe is for you!
This is such a simple dish that you can have a restaurant-worthy dinner on the table in about 20 minutes - it's the perfect solution for busy weeknights or simply when you're craving something delicious and satisfying.

Why you'll love this creamy gochujang pasta
- The gochujang adds a spicy, savory kick that makes this dish totally crave-worthy.
- You can make the sauce in the time it takes to cook the pasta.
- It's easily customizable, so you can make it your own!
What goes into gochujang pasta
Gochujang paste - This is the star of the show, so adjust the amount based on how much heat you like!
Gently cook it in the pan before adding the cream to deepen the flavor.
Pasta - Any type will work, but I love using a thicker noodle like rigatoni that can really hold onto the sauce.
Pancetta cubes - This adds salty, savory goodness, but feel free to swap it for bacon or keep it vegetarian by using mushrooms instead.
Garlic - Fresh is best, and don't be afraid to add a little extra if you're a garlic lover like me.

Heavy (double) cream - This makes the sauce super luxurious, but you could use half-and-half for a lighter option.
Parmesan - Freshly grated makes a huge difference, so treat yourself and grate your own.
Fresh basil leaves - This adds a pop of freshness at the end, but you could also try some chopped chives or parsley.
Top Tip
To make the sauce extra creamy, use a combination of heavy cream and reserved pasta water. Start with a little cream and gradually add pasta water while stirring until you reach your desired consistency.
How to make gochujang pasta sauce
Bring a large pot of water to a boil, then cook the pasta according to package directions until al dente. Reserve a cup of the pasta water before draining.
Meanwhile, heat the olive oil in a large skillet over medium heat. Add the pancetta and cook until it starts to crisp up.
Add the garlic and cook for about 30 seconds until fragrant.

Stir in the gochujang paste and let it cook for a minute.
Pour in the heavy cream and bring to a gentle simmer.

Toss in the cooked pasta and a splash or two of the reserved pasta water. Stir in the Parmesan cheese until it melts into the sauce.

Tear the basil leaves and sprinkle them over the pasta. Serve immediately with extra Parmesan if you like!
Variations
- Add some cooked, shredded chicken for a heartier meal.
- Skip the pancetta to keep this pasta dish vegetarian.
- Stir in some baby spinach at the end for extra greens.
- If you love heat, crank up the gochujang or add a sprinkle of red pepper flakes.
- Sprinkle with toasted sesame seeds for a nutty flavor.
Recipe notes and tips
- Salt your pasta water! It might sound obvious, but well-salted water seasons the pasta from the inside out.
- Gochujang varies in heat, so start with a little and add more to taste.
- For a milder kick, use less gochujang and balance it with a touch of honey.
Leftovers and storage
- Leftovers keep well in an airtight container in the fridge for up to 3-4 days.
- Gently warm the pasta on the stovetop over low heat, adding a splash of milk or pasta water if needed to loosen the sauce. You can also reheat individual portions in the microwave.
- Creamy sauces can sometimes separate when frozen, so I don't recommend freezing this pasta dish.
