Most pork stir-fry recipes start by slicing a tenderloin into neat little strips. Mine starts with a pack of ground pork, and I stand by that choice completely.
That's because ground pork browns faster, soaks up the sauce better and costs less than fancy cuts. Plus, you don't need to fry it in batches or marinate it.
And for a truly easy weeknight meal, I don't even bother mixing the sauce separately. Everything goes straight into the pan so each element of the sauce sizzles and reduces the moment it lands.
Why you'll love this ground pork stir fry

What you'll need
- Sesame oil - You'll need this twice, once for cooking and once in the sauce.
- Shallot - I like it 'cause it's milder and sweeter than a regular onion, but half a regular onion also works.
- Garlic and fresh ginger - The aromatic base of the whole dish. Fresh really is best here.
- Fresh red chili - This is for a little heat. You can take the seeds out for a milder stir fry.
- Red bell pepper - Any color works, but red looks the prettiest 😊
- Mushrooms - White button or cremini both work.
- Ground pork - The star, also sold as pork mince if you're on the other side of the pond. Regular ground pork has the best flavor, though lean works too.
- Broccoli - Cut the florets into small bites so they cook quickly right in the pan.
- Soy sauce - Low sodium is my go-to choice here.
- Rice vinegar - A little sharpness to cut through the richness.
- Sweet chili sauce - To add some body and a bit of sweetness.
- Shaoxing wine - The secret to proper takeout flavor. Dry sherry is the closest swap.

How to make ground pork stir fry
This is a quick overview with step-by-step photos. The full recipe with detailed steps is in the recipe card at the end of this post.
Heat the sesame oil in a large skillet or wok over medium-high heat and cook the shallot for a couple of minutes until softened. Add the garlic, ginger and red chili and cook for 30 seconds until fragrant.


Add the bell pepper and mushrooms and stir-fry for 3-4 minutes until just softened, then stir in the ground pork. Cook for 5-6 minutes, breaking it up with a spatula, until browned with no pink left.


Toss in the broccoli and stir-fry for 2-3 minutes until bright green and crisp-tender. A splash of water helps it along if the pan looks dry.
Add the sauce ingredients straight into the pan one at a time. Toss for 1-2 minutes until everything is glossy and coated, then serve over rice.


Substitutions and variations
- Ground chicken or turkey both work if you want it leaner, and ground beef is great too.
- If you don't have Shaoxing wine, dry sherry is the best stand-in. Or you could use mirin and go a touch lighter on the sweet chili sauce.

- Get the pan properly hot before anything goes in so the pork doesn't steam.
- Let the pork sit undisturbed for a minute before you start breaking it up so it gets a chance to get those tasty brown bits.
- Taste before adding any salt. Between the soy sauce and sweet chili sauce, it rarely needs more.
- If you want it saucier for rice, add a splash of chicken stock along with the sauce ingredients.
What to serve with ground pork stir fry
- Steamed jasmine or basmati rice is the classic pairing.
- Rice noodles or udon if you're team noodles.

Leftovers and storage
- Leftovers make a brilliant lunch bowl over fresh rice, especially with a fried egg on top.
- Store in an airtight container in the fridge for up to 3 days.
- Reheat in a skillet over medium heat with a splash of water to loosen the sauce and keep the pork juicy.
- Freeze portions for up to 2 months and thaw overnight in the fridge before reheating.
