This creamy saffron pasta sauce is restaurant-fancy yet weeknight-fast, and you only need a tiny pinch of saffron to turn everything golden and delicious. It's the same magic that makes my creamy saffron risotto so good.
Most saffron pastas brighten things up with a squeeze of citrus, but I wanted the saffron itself to be the star here, so I've left out the lemon from this one on purpose. A little zest at the end is lovely if you want it, but try it my way first!
Why you'll love this saffron pasta sauce
- It's golden, glossy and done in about 20 minutes.
- You only need a pinch of saffron and a handful of simple ingredients.
- It's the perfect accompaniment to chicken or seafood.

What you'll need
- Saffron - Just a pinch of threads, steeped in hot water to release that gorgeous color and flavor. A little goes a long way, so don't be tempted to tip in the whole jar.
- Short pasta - I used boccole, those little twists the sauce clings to beautifully, but any short shape works. Long pasta like tagliatelle is lovely here too.
- Unsalted butter - This is the base of the sauce, so I keep it unsalted to stay in control of the seasoning.
- Garlic - Freshly minced is best here.
- Dry white wine - It adds brightness and a bit of depth as it reduces. A crisp Sauvignon Blanc or Pinot Grigio is perfect.
- Heavy cream - Or double cream if you're in the UK, to make the sauce super silky and indulgent.
- Parmesan - Freshly grated, please.
- Seasonings - Red chili flakes for some very gentle heat, plus salt and freshly ground black pepper to taste.
Pro tip
Steep the saffron in freshly boiled water for at least five minutes before you start the sauce to draw out the color and flavor.

How to make creamy saffron pasta sauce

Steep the saffron in the freshly boiled water and set it aside to bloom. Get your pasta going in well-salted water, cook it to al dente and scoop out a mug of pasta water before draining.
Melt the butter in a large pan over medium heat, then add the garlic and cook for about a minute until fragrant. Keep the heat gentle so the garlic doesn't brown.
Pour in the white wine and let it bubble and reduce by half, then add the saffron along with its soaking water and red chili flakes and simmer for another minute.


Lower the heat, stir in the cream and let it gently simmer until slightly thickened. Add the drained pasta and toss, loosening with a splash of pasta water until everything is glossy.
Take the pan off the heat, stir through the Parmesan, season to taste, and serve immediately.


Substitutions and variations
- If you don't cook with wine, use an extra splash of pasta water or a little chicken or vegetable stock.
- I like to use a pinch of red chili flakes for the tiniest kick, but you can leave it out if you want.
- Heavy cream makes the sauce ultra rich and glossy, but half-and-half (single cream) would also work if you simmer gently and a bit longer.
Recipe tips and notes for the best saffron pasta sauce
- The sauce thickens as it cools, so keep that reserved pasta water handy to loosen it back up.
- The pasta should be cooked just al dente because it will continue to cook in the pan.
- This pasta dish is best served immediately, either on its own or as a side for your favorite protein. A crisp glass of white goes nicely with it, too!
Leftovers and storage
- If you do have any leftovers, they will keep well in the fridge for up to 3 days.
- Reheat slowly in a pan over low heat with a splash of cream, milk or water to loosen the sauce.
- I don't recommend freezing creamy sauces like this.

Ingredients
- ½ teaspoon saffron
- ½ cup (125 ml) water, freshly boiled
- 8 oz (225 g) short pasta, I used boccole
- 2 tablespoons unsalted butter
- 2 garlic cloves, minced
- ⅓ cup (80 ml) dry white wine
- ¼ teaspoon red chili flakes
- 1 cup (250 ml) heavy cream, double cream
- ⅓ cup (30 g) Parmesan, freshly grated
- Salt and freshly ground black pepper to taste
Instructions
- Place the saffron in a small bowl and pour over the freshly boiled water. Set aside to steep for at least 5 minutes while you cook the pasta.½ teaspoon saffron
- Bring a large pot of salted water to a boil and cook the pasta until al dente according to the package instructions. Reserve about 1 cup of pasta water, then drain and set aside.½ cup water8 oz short pasta

Notes
- The sauce thickens as it cools, so keep your reserved pasta water nearby to loosen it.
- For a brighter version, finish with a little lemon zest.
