Olive oil + butter — I like to use a mix of olive oil and butter for cooking the chicken because it’s a great way to get a good mix of high burning point and creaminess.
Chicken breast — Use boneless, skinless chicken breast cut into cubes. It's lean, cooks quickly, and absorbs the flavors of the sauce beautifully.
You can also use leftover cooked chicken in this pasta dish.
Garlic — Freshly minced or crushed garlic offers the best flavor in this recipe, and I wouldn’t substitute it with anything else.
Italian seasoning — Use a teaspoon of Italian seasoning for convenience or substitute with a mix of dried oregano and dried basil.
Dry white wine — Use a wine that you would enjoy drinking — I typically go for Sauvignon Blanc or Pinot Grigio for this type of sauce.
Heavy cream — You can use half and half (single cream) for the sauce, but it will be thinner.
Parmesan — Use freshly grated Parmesan cheese rather than pre-grated varieties. Freshly grated cheese melts better and offers a superior flavor.
Basil leaves — Fresh basil adds a burst of freshness and color. It pairs wonderfully with the garlic and Parmesan flavors. Fresh parsley is another option.
Pasta — I used mezze penne pasta in this recipe, but you can make it with any pasta shape that holds the creamy sauce well.

How to make chicken garlic parmesan pasta
Bring a large pot of water to a boil, salt it generously, and cook the pasta according to package directions. Reserve 1-2 of pasta water before draining.
Meanwhile, heat the olive oil and butter in a large skillet over medium heat. Once hot, add the chicken breast and cook for 7-8 minutes until slightly golden. Remove the chicken from the pan with a slotted spoon and set aside.
In the same skillet, add the garlic and Italian seasoning, then deglaze with the white wine. Allow the wine to bubble for 1-2 minutes for the alcohol to evaporate.
Next, add the heavy cream and cook for 1-2 minutes over medium-low heat or until the sauce thickens.
Stir in the grated parmesan, and then add the cooked pasta and chicken to the skillet. Toss well to combine, and add some of the reserved pasta water if it looks too dry.
Sprinkle the fresh basil on top, adjust the seasoning to taste and serve immediately.
Recipe notes and tips
- Make sure you don’t forget to reserve some of the water from cooking the pasta because you need the starch to keep the parmesan garlic sauce silky.
- Cook the pasta al dente because it will continue to cook slightly when tossed with the sauce.
- This parmesan garlic chicken pasta is best served immediately. If you do have leftovers, you can keep them in an airtight container in the fridge for up to 3 days. Reheat them in the microwave for 1-2 minutes until piping hot.

Ingredients
- 8 oz (250 g) pasta
- 1 tablespoon olive oil
- 1 tablespoon (20 g) butter
- 1 lb (450 g) chicken breast, cut into 1-inch cubes
- 4 garlic cloves, crushed
- 1 teaspoon Italian seasoning
- ⅓ cup (75 ml) dry white wine
- 1 cup (250 ml) heavy cream (double cream)
- ½ cup (50 g) Parmesan, grated
- 6-8 fresh basil leaves, shredded
- Salt and freshly ground black pepper to taste
Instructions
