Cashews and cranberries are not the first two ingredients that come to mind when you think about smoothies, but it's a combination that truly works.
I'm not talking about simply using cashew milk here, but real cashews added to the smoothie to make it perfectly silky and oh so delicious. The cranberries I used were dried ones, but you can also choose to use the fresh kind - just make sure they are ripe to maintain the sweetness of the smoothies.
This cranberry and cashew smoothie is very sweet on its own because of the banana and cranberries but I know that some people like their smoothies very very sweet, so you'll be pleased to learn that a teaspoon of maple syrup or agave nectar really ties together the flavours.
You'll notice that this smoothie has just shy of 600 calories, which means that it's a complete breakfast in itself. The high calories mostly come from the cashew nuts, but they are so worth it because they also have monounsaturated fatty acids that lead to healthy levels of good cholesterol.

Ingredients you'll need for this cashew & cranberry smoothie
To make the smoothie, you need the following:
- 2 small frozen bananas
- 50 g raw cashew nuts
- 75 g dry cranberries
- 250 ml cashew milk (or another plant-based milk)
- 1 teaspoon maple syrup or agave nectar (optional)
One note I have about this smoothie is that you need to blitz the ingredients for longer than usual because you want the cashew nuts to be completely pulverized so you don't feel any crunchiness when you drink it. I found that two minutes one a high-power blender does the trick.
