I love zucchini so much I use them in lots of veggie dishes, like this Italian zucchini stew or this delicious creamy mushroom zucchini pasta.
However, there are times when I simply have too many of them on my hands.
So if you’ve been wondering what to do with a lot of zucchini, these air fryer zucchini fries are an excellent idea.
They’re great as a quick snack or as an appetizer and pair well with so many dips.
I like to serve them with this sriracha aioli, but you can serve them with your favourite dips.

Ingredients and substitutions
Zucchini — You can slice the zucchini into sticks or rounds. I like to cut them into chunky fried because they’re the perfect shape for dipping.
If you want to cut them thinner so they’re crispier, you may need to reduce the cooking time.
Panko breadcrumbs — The coarse texture of these Japanese breadcrumbs gives the air fried zucchini a deliciously crispy crust. You can sub them with regular breadcrumbs.
Grated vegetarian hard cheese (or Parmesan) — Freshly grated cheese is best in this recipe, but you can also use a shop-bought version that's already grated. Parmesan is not vegetarian so if you're veggie, look for a vegetarian hard cheese alternative.
Eggs — Two medium eggs are typically enough for two zucchini. Make sure you shake off the excess after coating the fries in eggs before moving to the breadcrumbs mixture.
Flour — The purpose of the flour is to make the egg stick to the zucchini fries.
Pinch of salt — This is optional, and you may not need to add any salt because the Parmesan is already salty.
How to make zucchini fries in the air fryer
Mix the panko breadcrumbs with the grated Parmesan and garlic powder in a shallow bowl. Beat the eggs in a separate bowl and place the flour with a pinch of salt into a third bowl.
Coat the zucchini fries in flour, then in egg, then in the breadcrumbs and Parmesan mixture. Make sure all sides are well coated. Place the coated fries on a clean plate and repeat until all fries are coated.
Preheat the air fryer to 400°F (200°C) and then arrange the fries in the basket, making sure they’re not touching. You may need to work in multiple batches, depending on the size of your air fryer.
Cook for 8-10 minutes until golden and crispy.
Serve with your favorite dip — mine is this sriracha aioli dip!
Recipe notes and tips
- These zucchini fries are best served immediately. They won’t be as crispy when they’re cold, but you can reheat them in the air fryer for a couple of minutes to crisp them up.
- You can add various herbs and spices to make these fried zucchini in air fryer your own. Smoked paprika or a teaspoon of Italian seasoning mix are good ideas.

- 2 medium zucchini, cut into ½-inch-thick fries
- 75 g (1 cup) panko breadcrumbs
- 50 g (½ cup) grated vegetarian hard cheese or Parmesan
- 1 teaspoon garlic powder
- 2 medium eggs
- 100 g (½ cup) plain flour
- Pinch of salt
Instructions
