If you have ever wondered what to do with leftover Turkish delight, these flavourful, moreish cookies are the answer. Bonus - your house will smell incredibly with very little effort.
You don't actually have to be a Turkish delight lover to adore these little cookies. You have to love all things rose flavoured, though, as you'll be able to feel a hint of rose water with every bite.
I fell absolutely in love with these cookies from the first time I tried them. They are crispy on the outside but soft and chewy on the inside, and they also benefit from the addition of pistachio kernels for the perfect level of crunchiness.
Here's what you need to make these cookies - the full list of ingredients and instructions is in the printable recipe card at the bottom of the page.

Tips for making the best Turkish delight cookies
- You can use any kind of Turkish delight you want, but I always make them with the rose flavoured type simply because it complements the rose water so well.
- If you don't like rose water or you can't find it, you can skip it and add 1 teaspoon of vanilla extract instead.
- The butter needs to be softened and make sure the eggs are at room temperature. If any of these ingredients is too cold, the creaming process will be disrupted and you are likely to end up with hard cookies.
- The dough needs to chill in the refrigerator for at least 30 minutes to stop the cookies from spreading too much in the oven. You can also form the balls and freeze them for up to 3 months. If you freeze them, you should bake them straight from frozen.
- The pistachio kernels can be raw or slightly toasted.
- The muscovado sugar can be replaced with light brown sugar.
- The pistachio rosewater cookies will stay fresh covered at room temperature or you can store them in an airtight container for up to a week.

Only one question: What are "leftover Turkish delights?" π
Alice says
I hear some people have leftovers, but I'm not sure it's true π I have to buy a new box to make cookies because Turkish delight definitely doesn't last long in my home.
