I’m a massive fan of homemade curries, mostly because they’re packed with flavour, easy to cook and feel like a healthier version of a takeaway.
We have multiple curry nights a month in our home and this easy chicken Rogan Josh is one of our favourites.
Rogan Josh is a North Indian curry from the Kashmir region that’s typically made with lamb. While lamb Rogan Josh is incredibly tasty, it takes much longer to cook and has more calories, too.
This chicken Rogan Josh curry only takes 40 minutes to make and it’s only mildly spicy, so the entire family will simply love it!
What do you need to make chicken Rogan Josh?
Chicken — Chicken Rogan Josh is great with both chicken breast and boneless thighs. I prefer to make it with breast fillets because of the lower fat content, but thighs are more flavourful.
Olive oil + butter — Using a mix of olive oil and butter will infuse the chicken curry with a buttery flavour while keeping the smoking point high. You can use ghee instead for the same amazing flavour.
Garlic and ginger — Fresh garlic and ginger are best in curries, and I don’t recommend substituting them with shop-bought pastes because you’ll be missing out on flavour.
Spices — This chicken Rogan Josh has rich, bold flavours, and it all starts with frying a cinnamon stick and a couple of cardamom pods in the olive oil and butter mix. You’ll then need a mix of paprika (not smoked), ground coriander, ground cumin, ground cinnamon and cayenne pepper. To speed up the process, you can use a shop-bought Rogan Josh curry paste instead.
Tomato paste — Allow the tomato paste to cook for a minute with the spices before adding the passata for maximum flavour.
Passata (tomato sauce) — I make this curry with passata, but you can also make it with chopped tomatoes if you don't mind it being a bit chunkier.
Natural yoghurt — A thick natural yoghurt is perfect for this recipe (Greek-style yoghurt is fine). You can also top individual bowls with extra yoghurt when serving the curry.
How to make it?
Heat the oil in a large, heavy-based pot that has a lid and then melt the butter in it. When the butter is foaming, add the cinnamon stick and cardamom pods and cook for a minute over medium heat.
Add the onion and cook for 5-6 minutes until softened and slightly golden. Next, add the garlic and ginger and cook for another minute.
Stir in the spices and continue to cook for a further minute, stirring almost continuously.
Add a quarter of the chicken stock, stir to combine, then add the diced chicken and toss well to combine.
Stir in the tomato paste, passata and the rest of the chicken stock. Bring to a simmer, place the lid on and lower the heat to medium-low. Simmer for 10 minutes or until the chicken is cooked through.
Remove the lid and continue to cook for a couple more minutes, stirring occasionally, until the sauce is reduced.
Stir in the garam masala and yogurt and simmer for 1-2 minutes more.
Serve over basmati or cauliflower rice or with naan breads, topped with extra yoghurt and fresh coriander, if you like.
Recipe notes and tips
- This curry is best served immediately, but it will keep well in the fridge for up to three days in an air-tight container.
- You can freeze this chicken curry for up to three months (preferably without the yoghurt for the best texture).
- If you want the curry to be more fiery, you can add a finely diced red chilli pepper with the garlic and ginger.

Easy Chicken Rogan Josh
This easy chicken Rogan Josh has bold flavours, a perfect texture and a delicious creamy sauce. It takes just 40 minutes to make, and it’s just as good as a takeaway!
Ingredients
- 1 tablespoon vegetable oil
- 20 g (1 tablespoon) unsalted butter
- 1 cinnamon stick
- 2 cardamom pods, split
- 2 medium onions, finely chopped
- 4 cloves garlic, minced
- 1 tablespoon grated ginger
- 1 tablespoon paprika
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- ½ teaspoon cinnamon
- ¼ teaspoon cayenne pepper
- 400 ml (2 cups) chicken stock
- 400 g (14 oz) chicken breast, cut into bite size pieces
- 2 tablespoons tomato paste
- 200 ml (1 cup) passata (tomato sauce)
- 1 teaspoon garam masala
- 100 g (3.5 oz) natural yoghurt
Instructions
