Ingredients and substitutions
Chicken — You can make this creamy mustard chicken with chicken breasts for a leaner option or with boneless skinless thighs for juicier meat.
Olive oil + butter — Using a mix of olive oil and butter gives you a higher smoking point than just using butter and a creamier base than just using oil.
Shallot — The mellow flavor of shallots is simply perfect in this sauce.
Garlic — Freshly chopped or grated garlic is best in this sauce.
Fresh herbs — I used a mix of fresh thyme, rosemary and tarragon in this creamy mustard chicken. You can use your favorite blend or use a tablespoon of dried herbs de Provence instead.
White wine — Any crisp, dry white wine works in this sauce. My go-to choices are Sauvignon Blanc and Pinot Grigio.
Wholegrain mustard — I absolutely love wholegrain mustard in this sauce, but you can also use a mix o of wholegrain and Dijon mustard, too.
Cream — Heavy cream (double cream in the UK) is perfect in this sauce to make it extra creamy.
How to make creamy French mustard chicken
Slice the chicken breasts halfway lengthwise to make four fillets and season with a bit of salt and freshly ground black pepper.
Heat the olive oil in a cast iron pan and melt the butter in it over medium heat.
Once the oil has melted, add the chicken cutlets and fry for 6-8 minutes until golden on both sides. Transfer the cooked chicken to a plate.
Add the shallot to the same pan and cook for 1-2 minutes until translucent.
Stir in the garlic and fresh herbs and cook for another minute. Next, add the white wine to deglaze the pan. Simmer for a couple of minutes until the alcohol has mostly evaporated.
Stir in the wholegrain mustard, then add the chicken stock.
Simmer for 1 minute, then lower the heat and stir in the cream.
Simmer for 3-4 minutes until the sauce begins to thicken, then add the cooked chicken back to the pan.
Continue to simmer for a couple of minutes until the sauce has thickened and the chicken is heated through.
Adjust the seasoning as needed and serve immediately.
Recipe notes and tips
- This creamy mustard chicken is best served immediately. If you do have any leftovers, they will keep well in an airtight container in the fridge for up to 3 days, and you can reheat them in the microwave.
- It’s best to use a cast iron skillet instead of a non-stick one for this kind of chicken recipe. That’s because cast iron is perfect for searing and will leave you with some bits of meat on the bottom. When deglazed with white wine, they contribute to the development of some pretty amazing flavors.
- If you don’t cook with wine, substitute it with the same quantity of chicken broth.
- This creamy mustard chicken is perfect over mashed potatoes or pasta.

Ingredients
- 1 tablespoon olive oil
- 2 tablespoons (40 g) unsalted butter
- 2 large chicken breasts
- 1 medium shallot, finely diced
- 2 garlic cloves, finely chopped or grated
- 1 teaspoon fresh thyme, finely chopped
- 1 teaspoon fresh rosemary, finely chopped
- 1 teaspoon fresh tarragon, finely chopped
- ⅓ cup (75 ml) dry white wine
- 1 tablespoon wholegrain mustard
- ½ cup (100 ml) chicken stock
- ½ cup (100 ml) heavy cream
- Fresh parsley to garnish
Instructions
