Tuna Pea Pasta

Ingredients 

  • 8 oz (225 g) bowtie pasta
  • 1 cup (150 g) fresh peas
  • 1 tablespoon olive oil
  • 1 medium onion, finely diced
  • 2 large garlic cloves, finely chopped
  • ¼ teaspoon red chili flakes
  • 1 tablespoon lemon juice, freshly squeezed
  • 1 can (5 oz./140 g) tuna, drained
  • 2-3 tablespoons fresh parsley, roughly chopped
  • ⅓ cup (30 g) Parmesan, freshly grated
  • Salt and freshly ground black pepper to taste

Instructions

  • Bring a large pot of water to a boil, salt generously and cook the pasta according to the package instructions until al dente. When you have 2 minutes left, add the fresh peas to the pot.

  • Meanwhile, heat the olive oil in a large skillet or pot and sauté the onion for 2-3 minutes over medium heat until softened and translucent.

  • Add the garlic and continue to cook for another minute until fragrant.

  • Stir in the red chili flakes and lemon juice and simmer for a minute.

  • Drain the pasta and peas and add everything to the skillet. Toss well to combine.
  • Add the tuna and mix, careful not to crumble it too much.

  • Stir in the fresh parsley and Parmesan, then season to taste and serve immediately.
