Ingredients

  • 30 g (2 tablespoon) butter
  • 1 small onion
  • 1 teaspoon minced garlic
  • 1 teaspoon Italian herbs
  • ½ teaspoon thyme
  • 250 g (½ lb) potatoes
  • 1 medium carrot
  • 2 celery sticks
  • 75 g (⅔ cups) mature cheddar
  • 500 ml (2 cups) vegetable stock
  • 50 ml (¼ cup) double (heavy) cream
  • 2 Italian sausages, cases removed
  • Salt and pepper

Instructions

  • Cut all vegetables in large chunks and set aside.
    250 g potatoes
    1 medium carrot
    2 celery sticks
  • Add the butter, onion, garlic and herbs to the soup maker and cook on "saute" or similar setting depending on your model for 5 minutes.
    30 g butter
    1 small onion
    1 tsp minced garlic
    1 tsp Italian herbs
    ½ tsp thyme
  • Add all the vegetables, cheddar, and stock, and use the "smooth" or "creamy" setting on your soup maker.
    75 g mature cheddar
    500 ml vegetable stock
  • When there are 2-3 minutes left, add the double cream.
    50 ml double (heavy) cream
  • In the meantime, fry the Italian sausage in a small pan until golden and crisp.
    2 Italian sausages
  • When the soup maker is done, season with salt and pepper. Pour the soup into bowls and sprinkle the sausage on top.
  • Serve immediately with crusty bread or another side of choice.

Notes

You can add other vegetables to the soup, such as leek or a couple of mushrooms.
To make it vegan, substitute the butter for olive oil, and skip the double (heavy) cream and sausage.
