Mediterranean Cucumber Tomato Salad

This easy Mediterranean Cucumber Tomato Salad is deliciously crunchy and super refreshing. It’s the perfect accompaniment to meat-based dishes but absolutely delightful on its own, too!

Ingredients 

  • 1 large cucumber, diced
  • 10 plum tomatoes, sliced
  • ½ small red onion, sliced
  • 2 medium radishes, thinly sliced
  • ½ cup (80 g) canned chickpeas, rinsed and drained
  • ½ cup (60 g) taggiasca olives
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 8-10 fresh basil leaves

Instructions

  • In a large salad bowl, combine the diced cucumber, tomatoes, red onion, radishes, chickpeas and olives.

    ½ cup taggiasca olives
  • Pour the olive oil and lemon juice over the veggies, add the salt and pepper and toss gently to combine.

    1 tablespoon lemon juice
    ½ teaspoon salt
    ¼ teaspoon ground black pepper
  • Adjust the seasoning to taste, garnish with fresh basil leaves and serve immediately.
    8-10 fresh basil leaves

Notes

  • If your cucumbers have a thick skin, peel some or all of it.
  • Let the salad sit for 10-15 minutes before serving for the best taste.
