Instructions
In a large salad bowl, combine the diced cucumber, tomatoes, red onion, radishes, chickpeas and olives.
1 large cucumber
10 plum tomatoes
½ small red onion
2 medium radishes
½ cup canned chickpeas
½ cup taggiasca olives
Pour the olive oil and lemon juice over the veggies, add the salt and pepper and toss gently to combine.
1 tablespoon olive oil
1 tablespoon lemon juice
½ teaspoon salt
¼ teaspoon ground black pepper
Adjust the seasoning to taste, garnish with fresh basil leaves and serve immediately.
8-10 fresh basil leaves

If your cucumbers have a thick skin, peel some or all of it.
Let the salad sit for 10-15 minutes before serving for the best taste.
