This ham and cabbage soup is light and brothy yet super filling. It’s the best way to turn whatever ham you have left into a proper dinner in about 30 minutes.
1medium leek, white and light green parts only, sliced

4cups(280g)cabbage, shredded

Instructions
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the carrot and leek and cook for about 5 minutes, stirring occasionally, until softened and the leek is translucent.

Stir in the garlic, then add the ham, fresh thyme and bay leaf. Cook for 1-2 minutes, stirring occasionally.

Add the cabbage and cook for 3-4 minutes, stirring from time to time, until it begins to wilt.

Pour in the chicken stock and bring to a boil. Reduce the heat and simmer gently for 15 minutes, or until the cabbage is tender but still has a little bite.
Remove the bay leaf, season to taste with salt and freshly ground black pepper and serve hot.

Notes
Use low-sodium chicken stock and season at the end, as hams vary a lot in saltiness.
Shred the cabbage thinly and evenly so it doesn’t take ages to cook.
The soup tastes even better the next day, so it's a great one to make ahead.
