Chickpea Feta Salad

Ingredients 

For the dressing

  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon agave syrup
  • 1 teaspoon Italian herbs mix
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper

For the salad

  • 2 cans (14 oz / 400 g) chickpeas, drained and rinsed
  • 5 oz (150 g) feta cheese cubes
  • 15 cherry tomatoes, finely diced
  • 1 medium cucumber, finely diced
  • 1 small red onion, finely diced
  • 2-3 tablespoons fresh parsley, finely chopped

Instructions

  • In a small bowl or jar, whisk together the olive oil, lemon juice, agave syrup, Italian herbs mix, salt, and ground black pepper.

  • In a large bowl, combine the drained and rinsed chickpeas, cubed feta cheese, diced cherry tomatoes, cucumber, and red onion.

  • Pour the dressing over the salad and toss well until all the ingredients are evenly coated.
