Chicken Yaki Udon is a quick, easy, and delicious Japanese stir-fry recipe loaded with veggies and tender chicken bites. Just perfect when you want a tasty fakeout meal in just 30 minutes!
1lb(450g)chicken breast fillets, cut into bite-size pieces
1cup(100g)green onions, sliced
1cup(125g)carrot, peeled and julienned
1cup(150g)red bell pepper, sliced
1cup(225g)shiitake mushrooms, sliced
1cup(70g)white cabbage, shredded
2garlic cloves, minced
¼teaspoonred chili flakes
¼cup(60ml)low-sodium soy sauce
2tablespoonsoyster sauce
1tablespoonmirin
1tablespoonbrown sugar
14oz(400g)udon noodles, precooked

Instructions
Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and cook for 5 minutes or until almost cooked through.

Stir in the sliced green onions (white and light green parts only; reserve the dark ends for garnishing), carrot, red bell pepper, mushrooms and white cabbage and stir fry for 5 minutes.

Add the garlic and red chili flakes and continue to stir fry for 2-3 minutes.

Next, stir in the soy sauce, oyster sauce, mirin and brown sugar.

Add the udon noodles and toss to combine. Cook for 1-2 minutes until the noodles are heated through.
