Bang Bang Chicken (Crispy Air Fryer Recipe)

This bang bang chicken is crispy, air-fried and tossed in a creamy sauce that's sweet, spicy and absolutely addictive. There's no deep frying and no breading station, only golden takeaway-style crunch in every bite!

Ingredients 

For the chicken

  • 1 ½ pound (680 g) boneless, skinless chicken thighs
  • 3 tablespoons soy sauce
  • 1 tablespoon mirin
  • 1 tablespoon sesame oil
  • 4 garlic cloves, minced
  • 2 tablespoons fresh ginger, minced or grated
  • ½ teaspoon salt
  • ¼ teaspoon white pepper
  • 1 medium egg, beaten
  • ½ cup (64 g) cornstarch

For the sauce

  • ½ cup (125 ml) light mayo
  • ¼ cup (60 ml) sweet chili sauce
  • 1 tablespoon sriracha
  • 1 tablespoon soy sauce
  • 1 tablespoon lemon juice

Instructions

  • Add the chicken to a large bowl with the soy sauce, mirin, sesame oil, garlic, ginger, salt, white pepper and beaten egg. Toss until every piece is coated, then cover and refrigerate for 30 minutes to 1 hour.

  • Tip the cornstarch into a shallow dish. Working a few pieces at a time, lift the chicken out of the marinade and roll it in the cornstarch until fully coated, shaking off the excess. Set the coated pieces on a tray.

  • Preheat the air fryer to 200°C / 400°F. Leave the coated chicken to sit while it heats, until the coating looks damp rather than powdery.
  • Arrange the chicken in a single layer in the basket, working in batches. Air fry for 12 to 14 minutes, shaking the basket halfway, until golden, crisp and cooked through (75°C / 165°F in the thickest piece).
  • While the chicken cooks, whisk the mayonnaise, sweet chilli sauce, sriracha, soy sauce and lemon juice together in a large bowl.

    1 tablespoon lemon juice
  • Add the hot chicken to the sauce and toss until evenly coated. Serve straight away, scattered with spring onions and sesame seeds if you like.

Notes

  • Don't overcrowd the basket. Depending on the size of your air fryer, you'll need two or three batches, and you can pop the first batch back in for the last 2 minutes to warm it through.
  • You can make the sauce ahead and keep it in an air fry container in the fridge for up to 3 days.
  • Toss the chicken in the sauce just before serving, as the crust softens the longer it sits.
