Air Fryer Salt and Pepper Chips

These air fryer salt and pepper chips are the Chinese takeaway classic done properly at home, with blistered peppers, sweet onion and a five spice seasoning that clings to every chip.

Ingredients 

  • 1 pound (450 g) frozen chips
  • 1 medium onion
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 tablespoon neutral oil
  • 1 teaspoon 5-spice
  • 1 teaspoon garlic powder
  • ¼ teaspoon red chili flakes
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • Spring onion, sliced, to garnish

Instructions

  • Preheat the air fryer to 200°C. Cut the onion and both peppers into rough 2 cm chunks.
  • Tip the frozen chips into the air fryer basket, then add the onion, red pepper, green pepper, oil, Chinese five spice, garlic powder, chilli flakes, salt and black pepper.

    ½ teaspoon salt
    ¼ teaspoon ground black pepper
  • Toss everything together in the basket until the chips and vegetables are evenly coated in the oil and spices.
  • Cook for 15 minutes, shaking the basket once or twice, until the chips are deep golden and crisp at the edges and the peppers have softened with blistered, slightly charred patches.
  • Tip into a serving bowl or onto a plate, toss once more to redistribute the seasoning, then scatter over the sliced spring onion and serve immediately.

Notes

  • Don't overcrowd the basket. Crowded chips steam rather than crisp, so cook in two batches if you need to and combine at the end.
  • All air fryers run differently. Use the timing as a guide and go by colour and texture rather than the clock.
